Vanilla Nut Coffee (Caffeine Free)

Teeccino is a wonderful coffee substitute that gives me an energy boost when I occasionally get the “afternoon slump.” It also hits the spot after dinner when I want dessert.

This “coffee” is actually derived from dandelion root, carob and chicory and is non acidic.  You can mix in ground coffee with Teecino if you do want some caffeine to make a wonderful “half-caf” drink anytime of day.

I make Teccino in my French Press. I add 2 tablespoons to 3 cups of hot boiling water. I steep it for 5 minutes prior to pressing down  on the French Press. Afterwards pour into a mug for a delicious drink.

If you would like to enjoy this drink sugar-free, I recommend adding 6 drops of vanilla stevia per cup. If you would like it more sweet, you can replace the stevia with 1-2 teaspoons of coconut sugar. Another great addition is adding in a little bit of warm almond milk.

Homemade Italian Dressing (Vegan)

This dressing is scrumptious and very rich in omega 3 fatty acids. Hemp oil is an excellent source of Vitamin E.  We poured this dressing over a large salad this evening and it made a delicious dinner.

Add to bowl:
2/3 cup extra virgin olive oil
2/3 cup hemp oil
1 teaspoon Italian seasoning
1 teaspoon Herbamare
1/2 teaspoon garlic powder
5 cranks fresh pepper

Whisk ingredients together. Pour dressing into a glass container with a lid and refrigerate.

Vanilla Ice Cream (Dairy and Refined Sugar Free)

I think I found a winner with this ice cream. I hope you agree too!

Add to Vitamix:
1 tablespoon pure vanilla extract

2 cans coconut milk
1 cup cashews
1/4 teaspoon sea salt

Blend ingredients until smooth. Place container in freezer for 30-60 minutes. Pour into ice cream maker and process according to instructions. Serve immediately. Top with fresh raspberries or strawberries if desired.
