Banana Bread (Gluten and Dairy Free)

I always have a ton of bananas in my fruit basket these days because my one year old goes crazy for bananas.

This morning I realized I wanted to make some bread and decided to use two ingredients I had on hand: bananas and quinoa flour. This bread is delicious. It is perfect for breakfast or an evening snack. Enjoy it plain or with some butter or ghee spread on top of it.

Ingredients:
4 medium size bananas (mashed)
3 eggs
1 tablespoon vanilla extract
1/2 cup coconut sugar
2 cups quinoa flour
1 teaspoon baking soda
1/2 teaspoon sea salt
1/2 cup chopped walnuts (optional)

Preheat the oven to 350 degrees. Lightly grease a bread pan with olive oil.

Add the mashed bananas, eggs and vanilla extract to a small bowl. In a large bowl, mix together the coconut sugar, quinoa flour, baking soda and sea salt. Pour the wet ingredients into the large bowl and stir. Sprinkle in the walnuts and stir again. Pour the batter into the pan and bake in the oven for 70 minutes. Allow bread to cool before slicing.
