My husband loves Mint Chocolate Chip Ice Cream. Unfortunately, most of the commercial brands that make this type of ice cream use artificial green dye, hydrogenated oils and even chemicals. No thanks, I’ll pass!
After spotting a fluorescent green ice cream at the store, I decided to try to make my own version at home from real, whole food ingredients. My family raved about this ice cream and came back for seconds. The secret ingredient…real peppermint extract.
This healthy ice cream is rich in potassium from bananas and iron from the coconut milk and chocolate chips. Enjoy!
Ingredients:
1 can coconut milk
2 frozen bananas
1 cup coconut sugar
1 cup dairy free chocolate chips
1 tsp. pure peppermint extract
1 tsp. pure vanilla extract
Place all of the ingredients except for the chocolate chips into a Vitamix or blender and blend on high for several minutes. Pour into an ice cream maker and process for 30 minutes. Sprinkle the chocolate chips into the ice cream maker the last 5 minutes.
Serve in bowls or inside gluten-free ice cream cones. Makes 8 servings.

This recipe looks great! I made a coconut milk based mint chocolate chip ice cream for my husband this summer (he is crazy about mint chocolate chip ice cream like your husband). But I love the banana, such a good idea. I am definitely going to try this one!
