Tart Cherry Strawberry Ice Cream (Vegan)

Who said ice cream couldn’t be healthy?! This treat is loaded with antioxidants from strawberries and tart cherry juice concentrate.

On a side note, I highly recommend tart cherry juice if you exercise regularly as it has really helped me recover faster after my runs (it is known to help promote joint health.)

Ingredients:
1 can coconut milk
2 cups frozen strawberries
1/2 cup coconut sugar
3 Tbsp. tart cherry juice concentrate
1 Tbsp. vanilla extract
1/4 tsp. liquid vanilla stevia

Place all of the ingredients into a Vitamix or blender and blend on high for several minutes. Pour mixture into an ice cream machine and process according to instructions (approximately 30 minutes.) Enjoy immediately or freeze for later use.
