My husband has been begging me to make Strawberry Ice Cream for a few days now. I try to use produce that is in season when I can and I picked up two persimmons at the store yesterday that were perfectly ripe. I decided to add the fruit to my recipe and see how it turned out. I think I hit the jackpot on this one-it turned out amazing!
Both strawberries and persimmons are very rich in Vitamin C and manganese. These two fruits also contain antioxidants and are good sources of dietary fiber. I hope you enjoy this dairy-free treat and the delicious taste of persimmons!
Add to Vitamix or Blender:
1 can coconut milk
2 persimmons
2 cups frozen strawberries
1/2 cup coconut sugar
3/4 tsp. vanilla extract
1/2 tsp. liquid vanilla stevia
Blend on high for 3 minutes. Pour mixture into an ice cream maker and process according to instructions (approximately 30 minutes). Enjoy immediately or freeze for later use.

Mmm I LOVE persimmons but somehow haven't gotten around to doing anything with them this year! Time to change that. This ice cream looks great!

You can often find persimmons near the bananas this time of year. They are worth trying for sure!
This ice cream sounds GREAT! I just bought some coconut sugar–I don't know why I did it, but it sounded like something I wanted to try. Now you've given me a perfect recipe; all I need to do is to pick up some persimmons, everything else is already waiting.
