Pomegranate Ice Cream (Dairy Free)

This creamy ice cream is bursting with flavor from two superfruits: pomegranate and lucuma.

Pomegranates are jam packed with antioxidants, fiber and potassium. Lucuma is a fruit native to Peru which is rich in B Vitamins. As a powder, lucuma is a great low-glycemic sweetener.

Seeds of 1 Pomegranate
1 1/2 cup coconut milk
1/2 cup coconut sugar
1/4 cup Lucuma Powder
1 tsp. vanilla extract

Place the pomegranate seeds, coconut milk, coconut sugar, lucuma and vanilla in a Vitamix or blender and blend on high for several minutes. Place container in the freezer for 30 minutes. Pour mixture into an ice cream maker and process for 30 minutes.

  1. I love pomegrates! I usually end up just eating them out of hand because I love them too much to put into something else! But this sounds like it would be worth it. Does it have a grainy texture from the seeds?

  3. It actually wasn't grainy at all. I think blending it on high for a few minutes with the other ingredients was the key. Aren't pomegranates great?!
