Vanilla Toffee Ice Cream (Vegan)

Oh la, la…! This ice cream has the perfect texture–creamy and utterly smooth. And the taste? Incredible. Seriously. If you have seen many of my previous posts, you know that I LOVE homemade dairy-free ice cream. This recipe was no exception.

My family makes ice cream several times per week as both my husband and I like to enjoy a little healthy dessert after dinner. I love eating a dessert that is made up of only a handful of ingredients that are from whole foods.

Add to Vitamix or Blender:
1 can coconut milk (this brand is BPA free)
1 cup cashews
1 cup coconut sugar
1 Tbsp. vanilla extract
1/4 tsp. liquid vanilla stevia
1/4 tsp. sea salt

Blend on high for several minutes. Place the container in the freezer for 30 minutes. Pour the mixture into an ice cream maker and process according to manufacturer’s instructions (approximately 30 minutes).

Eat up!

Makes 4-6 servings.

  1. I really need to get an ice cream maker! This looks wonderful!! What is coconut sugar? Can you make your own? I bet it would be so good in a lot of dishes!

    I have never made my own before, but I do use this to make coconut powdered sugar 🙂

  6. Oh wow, this looks so good! I just got an ice cream maker for Christmas and, while I eat dairy, I try to limit it. I was wondering how dairy-free ice cream would turn out in it, so it's good to know it would work!

  7. Coconut milk and/or cashews are a great base for dairy-free ice cream. I usually use one or the other, but for this recipe I splurged and used both!
