Apple Cinnamon Spice Cake (Gluten-Free & Vegan)

I just say the word cake and my four year old comes running. It makes me laugh.  I don’t mind a bit. Cake means a relatively healthy treat at our house–one made from healthy flours and oils. This cake is a great dessert that is not over-the-top sweet. It also pairs perfectly with a cup of tea.Both brown rice and teff flours are good sources of fiber and iron.  This cake contains omega 3 fatty acids from the flax seeds while cinnamon helps to balance blood glucose levels.

2 cups brown rice flour
1 cup teff flour
1 cup applesauce
1 cup coconut sugar
1/4 cup almond milk (or milk of choice)
2/3 cup maple syrup
1 tsp. baking powder (GF)
1 Tbsp. olive oil
1/3 cup flax seed meal
1 Tbsp. vanilla
2 tsp. cinnamon
1/2 tsp. sea salt
1/8 tsp. nutmeg

1/2 apple, peeled and cored
pinch each of coconut sugar and cinnamon

Preheat oven to 350 degrees. Grease a cake pan or spring form pan lightly with olive oil. Place all ingredients into a large bowl and beat with an electric mixer on medium speed for 5 minutes. Pour batter into the pan. Slice half of an apple and place apple slices on top of the cake batter. Sprinkle cinnamon and coconut sugar on top. 

Bake for 45 minutes. Remove pan from oven and let cake cool for 15 minutes. Remove cake from pan and slice.

Serves 8.

My husband and daughter love maple syrup and I bet it makes the cake taste so amazing. Maple syrup is so rich with that lovely caramel flavor. Do you ever use grade B? It's our favorite.
