Berries ‘N Cream Ice Cream (Sugar-Free & Vegan)





Berries are one of nature’s wonders–bursting with antioxidants and immune boosting Vitamin C. This homemade treat is made without sugar and with only 4 ingredients, yet still sweet and refreshing. 


This is berry good ice cream :)






Add to Vitamix or Blender:
2 cups frozen organic mixed berries (strawberries, blueberries, blackberries and/or raspberries)
1 can coconut milk (this brand is BPA free)
1/2 cup dates, soaked for 20 minutes

Add berries, coconut milk and stevia to Vitamix and blend on high for 2 minutes. Discard water from dates and remove the pits. Add dates to container and blend on high for 3 minutes. Pour mixture into an ice cream maker and process according to manufacturer’s directions for approximately 30 minutes.

Scoop into bowls or into gluten-free ice cream cones. Cheers!

Makes 6 servings.

  1. What measurement is the 1/4 liquid stevia? Looks good!

  2. Ahh sorry corrected it-1/4 tsp liquid stevia. Also a note that dates can be omitted and just stevia used. Or one can replace stevia with 1/2 cup coconut sugar or raw honey if desired.

  4. This looks awesome! I need an ice cream maker, but I shelved the idea of buying one when I figured out I'm lactose-intolerant.

  5. It's really worth the investment (mine was $30) if you like homemade ice cream. I have never made an ice cream with lactose in it-always use a base of coconut milk or cashews. In the summer, my machine is always going!
