Raw Lemon “Cream” Bars (Dairy-Free, Sugar-Free, & Vegan)

Any lemon fans out there?!

I’m crazy about all citrus fruits, especially this time of year as the temperature begins to rise and the sunshine abounds.

These lemon bars are decadent, yet made from only a few basic ingredients. This is my kind of bar–refreshing, delicious and so easy to make! Lemons are a fabulous source of Vitamin C and very cleansing. Cashews are rich in iron, magnesium and protein. (The bars appear white because I haven’t added the yellow dye put in commercial lemon bars!)

Add to Vitamix or Blender:

4 cups cashews

1 cup lemon juice (freshly squeezed, if possible) (or 15 drops doTerra lemon essential oil)

1 cup water

1/2 cup coconut oil

1/2 cup coconut nectar

1/4 tsp. lemon drop stevia (optional, but is a fabulous addition!)

Place all ingredients into the Vitamix and blend on high for 2 minutes. You may need to use a spatula once to scrap down the sides and re blend for a few more seconds. Use a spatula to scoop the mixture into a pie pan. Freeze for at least 2 hours. Use a large knife to cut into individual bars. Serve!

Makes 8 servings.

These look heavenly Laura! We don’t tend to cook with stevia (it’s only just been approved over here) so I would have to leave that out but I can imagine that your lemon bars taste just awesome!

Sounds tasty!  I haven’t made anything lemony here for quite a spell, so this may be the next dessert on my list ☺  Our weather has been in the upper 80′s so this would be a cool and refreshing treat.  Thanks for sharing in our recipe hop!
