The last few weeks have been very busy for me. And with temperatures in the upper 90′s, I’ve been making a lot of homemade ice cream. While I made a ton of this kind last week, today I opted for trying something new. This ice cream has the most amazing color (a bright orange hue) thanks to the gorgeous goji berries. This healthy dessert or snack is a fantastic way to get a large dose of antioxidants and vitamins. Kids and adults alike will love this treat.
Add to Vitamix or Blender:
1 can coconut milk
2 large bananas
1 cup goji berries
1/4 cup coconut sugar
10 drops liquid vanilla stevia (optional)
Soak the goji berries in 1/2 cup water in a small bowl for 10 minutes. Drain and discard water.
Blend all ingredients on high for several minutes. Place container in freezer for 30 minutes. Pour mixture into ice cream maker and process according to manufactuer’s directions (approximately 30 minutes).
Makes 4-6 servings.
