Peach Apricot Smoothie (Dairy Free, Sugar Free & Vegan)

My sweet neighbor brought me over some fresh apricots she had picked from her tree a few days ago. Generally, I would try to make a baked dessert with the perfectly ripe fruit. However, my daughter begged me to use the apricots in a smoothie.

I wasn’t quite sure how apricots would taste in a smoothie…but when it is 100 degrees out, a refreshing smoothie made with any type of fruit sounds appealing. I am pleased to say this smoothie inspired by my creative daughter is simply delightful. And with another bag of ripe apricots lingering in my kitchen, I’ll be making this scrumptious smoothie again tomorrow. Enjoy this drink and the huge Vitamin C boost it will give you!

Add to Vitamix or Blender:

2 1/2 cups homemade almond milk (or unsweetened almond milk)

4 ripe apricots

2 peaches

1 banana

10 drops orange liquid stevia (or a half of a peeled orange)

1/2 cup ice cubes

Blend on high for 1 minute. The drink should be smooth and creamy. Serve immediately. Yum!

Serves 4.

    What a great smoothie! So many great items I have never thought to combine! I have a smoothie almost every morning (usually made with almond or coconut milk as the base). Peaches and apricots sound like a fantastic flavour combination!
