My daughter adores pears. They are her favorite fruits hands down. My son…he can eat strawberries like craaazy.

I created this smoothie to please my pear loving daughter and to make sure everyone in the family gets a good dose of protein and fiber in a smoothie. It’s been hot here and that usually means lots of homemade ice cream, salads and smoothies. I try to pack as much of a nutritional punch in all of those categories as possible 🙂 This smoothie is satisfying, fulfilling and darn good for you. Enjoy Friends!

Ingredients
  • 1 cup unsweetened or homemade almond milk
  • 1 cup water
  • 1 pear, washed and cored
  • 1 scoop of vanilla protein powder (of your choice)
  • 2 tsp. white chia seeds
  • ⅛ tsp. pure vanilla extract
Instructions
  1. Place all ingredients into a Vitamix or blender and blend on high for 1 minute. Serve over ice and enjoy!

A Healthier Cup of Coffee

I never used to be a coffee drinker. I was a tea gal. I used to hangout at coffee shops on Pearl Street Mall in Boulder, CO drinking amazing herbal tea blends. I was crazy about green tea, rooibos tea, fruit tea-you name it. Then I had kids. And everything changed!

A hot cup of coffee on a cold wintry morning started it all. It was my time for ME in the morning. I enjoyed the taste of coffee, the smell…all of it. And then I had toddlers and really didn’t want to give up my coffee 🙂

Over the past few years, I have changed up my morning cup of Joe quite a few times. I’ve made it sugar-free at times with liquid vanilla stevia. I’ve tried various creamers and just had it straight up black like my French hubby loves. But lately I’ve been making it as healthy as possible.

As a nutritionist, I know that coffee is quite acidic. While coffee is full of antioxidants and has many health benefits, it should be consumed in moderation. I now enjoy coconut milk cream in my coffee as a dairy-free alternative to traditional creamer. Coconut milk contains lauric acid, a fatty acid, that has antibacterial and antiviral properties helping to build the immune system to fight infections and viruses. Additionally, coconut milk also naturally contains electrolytes including magnesium, chloride, potassium and sodium which helps keep the body hydrated and working at an optimal level.

A touch of cinnamon still makes the coffee an enjoyable drink and helps stabilize blood sugar and helps to lower LDL (or bad cholesterol). Raw honey is a superfood that is full of natural enzymes and immune boosting properties.

Ingredients
  • 8-10 ounces hot brewed organic coffee
  • 1Tbsp. chilled coconut milk cream
  • 1 tsp. raw honey (use liquid vanilla stevia if avoiding all sugar)
  • 1 drop cinnamon essential oil (or a dash of cinnamon)
Instructions
  1. I store the canned coconut milk in the fridge and then the cream is on top when the can is opened.
  2. Add coconut milk cream, honey and cinnamon to cup of coffee and stir. Enjoy hot!

Cinnamon Roll Shake! (Dairy Free, Cane Sugar Free & Vegan)

Earlier this week as my husband and I were getting my daughter ready for school, my daughter asked me if I could make a recipe for homemade Cinnamon Rolls. With twenty minutes until we had to leave for school, I said sorry not right now.

“Pleaaaase!”, Emma begged. So I offered to make her a shake with cinnamon and flavors similar to a cinnamon roll. That did the trick. My kids are crazy for cinnamon. They call it red sugar.

The smoothie came out thick and creamy and filled everyone up until lunch time. I’ve even been asked to make it a few times already again this week. Please note this is one satisfying, nourishing and hearty smoothie filled with healthy fats and protein. If you want a lighter version of this smoothie, omit the canned coconut milk and opt for either 2 cups more almond milk or filtered water. Enjoy!

Ingredients
  • 2 cups almond milk, unsweetened or homemade
  • ½ can of chilled coconut milk (the cream on top of can)
  • 2 cups crushed ice
  • ⅓ cup pecans
  • ⅓ cup coconut sugar
  • 2 tsp. cinnamon or 4 drops cinnamon or cassia essential oil
  • 1 tsp. pure vanilla extract
Instructions
  1. Add all ingredients to Vitamix or blender. Blend on high for 2 minutes. Pour into glasses. Sprinkle additional cinnamon on top if desired. Serve!

This orange smoothie will knock your socks off or as my daughter said (who happens to love the Pinkalicious Book Series) it is Orangealicious! This drink is a healthy alternative to the carrot juices often sold at the grocery stores that are pasteurized and tend to contain artificial colors. It also happens to be incredibly high in Vitamin A  which promotes radiant skin and healthy eyesight.

Note: I use Wild Orange essential oil or liquid orange stevia in this recipe.

  • 2 cups filtered water
  • 2 cups orange juice
  • 2 very large carrots
  • ⅓ cup raw honey
  • 5 ice cubes
  • 5 drops wild orange essential oil (or orange stevia)
Instructions
  1. Wash carrots and discard ends of carrots. Add all ingredients to Blender or Vitamix. Blend on high for 1 minute. Serve!

My kids have endless energy. Endless I tell ya 🙂 So revving them up with caffeine is the last thing they need. But no worries, they are not deprived in the least. They get their share of chocolate. Fortunately, they also happen to love the flavor of carob. And so do I. Win, win for all of us!

This smooth shake is an awesome dessert drink or a great snack for anytime of day you just want to indulge a little minus any artificial ingredients and colors.
