Howdy Friends! I know I have been missing in action for awhile. Life was chaotic this Fall as we sold our first home and moved into our new home. There is nothing easy about selling, buying and moving with a 2 year old and 5 year old! Alas, life is settling down now and I can get back to the kitchen where I feel at peace, creating recipes and feeding my family nourishing, comforting food. Vanilla Cashew Milk (Dairy Free, Sugar Free & Vegan)

We drink a lot of almond milk around here. I make my Strawberry Almond Milk recipe quite often. And while we love it, sometimes it’s good to change things up. Homemade Cashew Milk is a wonderful alternative to almond milk that is creamy, delicious and equally good for you. Cashews are rich in copper, iron, magnesium and protein.

 Add to Vitamix or Blender:

2 cups cashews, soaked in water for 8 hours (and then drained)

7 cups filtered water

15 drops liquid vanilla stevia

1 1/4 tsp. pure vanilla extract

pinch of sea salt

Blend on high for 2 minutes. Place hand on top of lid when blending as the container will be quite full.

Place a nut milk bag (or cheesecloth) over a glass container and pour milk through bag, allowing the milk to pour into the storage container. Place container in fridge and drink within 2-3 days.

Please Note: With cashew milk you don’t need to use a nut bag as cashews blend up very well into the mixture and leave very little pulp. Yet, I still run the milk through a nut milk bag one time to remove the small particles and ensure the texture is completely smooth.

Makes 8 servings.

Peach Apricot Smoothie (Dairy Free, Sugar Free & Vegan)

My sweet neighbor brought me over some fresh apricots she had picked from her tree a few days ago. Generally, I would try to make a baked dessert with the perfectly ripe fruit. However, my daughter begged me to use the apricots in a smoothie.

I wasn’t quite sure how apricots would taste in a smoothie…but when it is 100 degrees out, a refreshing smoothie made with any type of fruit sounds appealing. I am pleased to say this smoothie inspired by my creative daughter is simply delightful. And with another bag of ripe apricots lingering in my kitchen, I’ll be making this scrumptious smoothie again tomorrow. Enjoy this drink and the huge Vitamin C boost it will give you!

Add to Vitamix or Blender:

2 1/2 cups homemade almond milk (or unsweetened almond milk)

4 ripe apricots

2 peaches

1 banana

10 drops orange liquid stevia (or a half of a peeled orange)

1/2 cup ice cubes

Blend on high for 1 minute. The drink should be smooth and creamy. Serve immediately. Yum!

Serves 4.

Blueberry Bliss Smoothie! (Dairy Free, Refined Sugar Free & Vegan)

Are you a fan of blueberries? If so, you are going to love this smoothie! It tastes out of this world.

My family slurped this drink down in seconds yesterday and begged me to make it again today. And truth be told, I didn’t mind a bit! This smoothie is perfect for a quick breakfast, fast snack or dessert beverage.

There is spinach and chia seeds in this “treat” and I promise you cannot tell by drinking it. Acai powder and blueberries are chocked full of antioxidants, vitamins and trace minerals.

 Add to Vitamix or Blender:

2 cups almond milk (unsweetened vanilla or homemade)

2 cups water

2 cups spinach

2 cups frozen blueberries

2 spoonfuls acai berry powder

4 Tbsp. pure maple syrup (or raw honey)

1/3 cup chia seeds

1 tsp. pure vanilla extract

Blend on high for 1 minute. Pour into glasses and enjoy!

Makes 6 servings.

Raspberry Milkshake (Dairy Free, Refined Sugar Free & Vegan)

This past weekend my family and I went to Bear Lake. We love it there. It is so beautiful and always gives us a much needed break from busy city life.

Bear Lake and the surrounding area is famous for its abundance of raspberries. In August they have an entire festival centered around raspberries. Everyone talks about Bear Lake’s raspberry milkshakes. I’ve been going up to the lake for years and never tried a milkshake. I just couldn’t give in to drinking a milkshake that I knew was full of less than stellar ingredients. But this year I caved.

I saw people drinking the shakes by the lake and my daughter begged me for one. Oh my…it was pure bliss! But besides raspberries, I’m pretty sure there was nothing else healthy in that shake. So I vowed to make my own dairy-free version at home this week. And thank goodness I did! This “milkshake” is sweet and creamy and can be enjoyed to one’s heart content without a doubt of what fake ingredients might be lurking in it.

Add to Vitamix or Blender:

2 cans coconut milk

1 cup coconut sugar

12 ounces fresh raspberries

2 tsp. pure vanilla extract

1 tray ice cubes

Blend on high for 2 minutes. Pour into glasses and enjoy!

Makes 4 servings.
