I love fruit bread. I find it a perfect treat after dinner or as a nice addition to any breakfast. I also love figs..a lot! Figs are rich in calcium, fiber and potassium. Pecans contain B Vitamins and antioxidants from Vitamin E. And then there is coconut flour. This amazing flour is bursting with protein and fiber.
Ingredients:
1 cup coconut flour
1/2 cup tapioca flour
3/4 cup figs, chopped and stems removed
3 eggs
1/2 cup coconut sugar
1/2 cup pecans
1/3 cup honey
2 Tbsp. olive oil
1 1/2 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla extract
1 tsp. sea salt
Preheat oven to 350 degrees. Lightly grease a bread pan.
Place all ingredients except pecans into a large bowl and mix with an electric mixer for 5 minutes. Sprinkle in the pecans and mix for another 3-5 minutes. Pour batter into bread pan. Bake for 40 minutes. Let cool for 20 minutes before slicing the bread.
You could also use walnuts in place of pecans if you prefer. If you can’t find figs locally, I like to use these figs.
