Tasty Grain-Free "Cheese" Crackers (Dairy-Free, Paelo & Vegan Option)

Serves: Makes about 40 crackers.
  • 1 cup almond flour
  • ½ cup coconut flour
  • 2 eggs (2 Tbsp. flaxseed meal mixed with 2 Tbsp. water, set to firm for 5 minutes)
  • 2 Tbsp. olive oil
  • 1 Tbsp. nutritional yeast
  • ½ tsp. Herbs de Provence
  • ½ tsp. Herbamare (or sea salt)
  • dash of black pepper
  1. Preheat oven to 350 degrees. Place all ingredients into a medium size bowl and mix with an electric mixer on medium speed for 3 minutes. Place batter in ball on wax paper and roll out with a roller. Using a knife, cut into 1 inch thin squares. Place cut outs on baking mat. Bake for 15 minutes. Remove from oven and let cool 10 minutes.
