Raw Lemon “Cream” Bars (Dairy-Free, Sugar-Free, & Vegan)

Any lemon fans out there?!

I’m crazy about all citrus fruits, especially this time of year as the temperature begins to rise and the sunshine abounds.

These lemon bars are decadent, yet made from only a few basic ingredients. This is my kind of bar–refreshing, delicious and so easy to make!┬áLemons are a fabulous source of Vitamin C and very cleansing. Cashews are rich in iron, magnesium and protein. (The bars appear white because I haven’t added the yellow dye put in commercial lemon bars!)

Add to Vitamix or Blender:

4 cups cashews

1 cup lemon juice (freshly squeezed, if possible) (or 15 drops Lemon essential oil)

1 cup water

1/2 cup coconut oil

1/2 cup coconut nectar

1/4 tsp. lemon drop stevia (optional, but is a fabulous addition!)

Place all ingredients into the Vitamix and blend on high for 2 minutes. You may need to use a spatula once to scrap down the sides and re blend for a few more seconds. Use a spatula to scoop the mixture into a pie pan. Freeze for at least 2 hours. Use a large knife to cut into individual bars. Serve!

Makes 8 servings.
