Raspberry Milkshake (Dairy Free, Refined Sugar Free & Vegan)

This past weekend my family and I went to Bear Lake. We love it there. It is so beautiful and always gives us a much needed break from busy city life.

Bear Lake and the surrounding area is famous for its abundance of raspberries. In August they have an entire festival centered around raspberries. Everyone talks about Bear Lake’s raspberry milkshakes. I’ve been going up to the lake for years and never tried a milkshake. I just couldn’t give in to drinking a milkshake that I knew was full of less than stellar ingredients. But this year I caved.

I saw people drinking the shakes by the lake and my daughter begged me for one. Oh my…it was pure bliss! But besides raspberries, I’m pretty sure there was nothing else healthy in that shake. So I vowed to make my own dairy-free version at home this week. And thank goodness I did! This “milkshake” is sweet and creamy and can be enjoyed to one’s heart content without a doubt of what fake ingredients might be lurking in it.

Add to Vitamix or Blender:

2 cans coconut milk

1 cup coconut sugar

12 ounces fresh raspberries

2 tsp. pure vanilla extract

1 tray ice cubes

Blend on high for 2 minutes. Pour into glasses and enjoy!

Makes 4 servings.

Mango Milkshake (Vegan)

Ahh…mangoes. How I love thee. The continuous winter weather we are having here in the Rocky Mountains  has me dreaming about a week at the beach in the warm sun. So while I can’t transport myself and the rest of the family to the tropics at the moment (hopefully one day soon!), I can make a beach worthy milkshake.

I love milkshakes, but haven’t had one in years from a restaurant due to the ingredients found in commercial milkshakes. This “milkshake” is made up of only five ingredients with the base being coconut milk. It is a good fix for any sweet tooth you may have or if you just want to treat yourself to something special. I often make this drink for my daughter as a quick, healthy snack before swim lessons or a trip to the park.

Mangoes are loaded with potassium and Vitamins A, C and E. The addition of banana to this drink adds a boost of fiber and manganese to the drink. Coconut milk is rich in lauric acid which has anti-viral properties that help to boost the immune system.

Add to Vitamix or Blender:
1 can coconut milk (this brand is BPA free)
2 mangoes, peeled and flesh removed  (2 cups frozen mangoes will also work)
1 frozen banana
1 cup ice
2 Tbsp. coconut sugar

Blend on high for 2 minutes until smooth and creamy. Serve in a glass and enjoy!

Makes 4 servings.
