My daughter adores pears. They are her favorite fruits hands down. My son…he can eat strawberries like craaazy.

I created this smoothie to please my pear loving daughter and to make sure everyone in the family gets a good dose of protein and fiber in a smoothie. It’s been hot here and that usually means lots of homemade ice cream, salads and smoothies. I try to pack as much of a nutritional punch in all of those categories as possible ūüôā This smoothie is satisfying, fulfilling and darn good for you. Enjoy Friends!

Ingredients
  • 1 cup unsweetened or homemade almond milk
  • 1 cup water
  • 1 pear, washed and cored
  • 1 scoop of vanilla protein powder (of your choice)
  • 2 tsp. white chia seeds
  • ⅛ tsp. pure vanilla extract
Instructions
  1. Place all ingredients into a Vitamix or blender and blend on high for 1 minute. Serve over ice and enjoy!

Double Chocolate Chip Drop Cookies (Cane Sugar Free, Dairy Free & Vegan)

Here’s a rich bite size chocolate chip cookie for your sweet tooth. It will satisfy ¬†your tummy at just the right time–late morning snack, afternoon craving, dessert after dinner…you name it. And yet these cookies are not overly, uber sweet. If you’ve got a real sweet tooth, I would recommend adding a pinch more sweetener to the recipe as the cacao powder is simply pure raw chocolate. Cacao is an incredible source of antioxidants and magnesium, but can be bitter tasting by itself.

The good thing is the batter is vegan so taste it before you bake it and if you want to add a touch more sweetener or perhaps vanilla stevia to it, go right ahead!

Double Chocolate Chip Drop Cookies (Cane Sugar Free, Dairy Free & Vegan)

Ingredients
  • 1 cup quinoa flakes
  • ½ cup coconut nectar (or raw honey)
  • ¼ cup coconut oil, melted
  • 4 Tbsp. cacao powder
  • 2 tsp. pure vanilla extract
  • 4 Tbsp. coconut flour
  • ⅓ cup applesauce
  • ½ cup dairy-free chocolate chips
  • ¼ cup almond milk (or milk of choice)
  • 2 Tbsp. flax seed meal, soaked in 2 Tbsp. water for 5 minutes in small bowl
  • 1 tsp. baking soda
Instructions
  1. Preheat oven to 350 degrees. Melt coconut oil in a small saucepan and set aside. Add all ingredients into a large mixing bowl and beat with an electric mixer on medium speed for 3 minutes. Place two silicone baking mats on two baking sheets. Drop cookie batter by the spoonful onto the baking mats, 1 inch apart.
  2. Bake for approximately 20 minutes depending on your oven. Remove cookies from oven and let cool 10 minutes.

 

Pistachio Gelato (Dairy Free, Cane Sugar Free & Vegan)

I remember the first time I discovered gelato. I was on a road trip in college with my best friend and we were headed back to Boulder, CO from Moab, UT. We stopped in Glenwood Springs to hit up the hot springs after a camping and hiking weekend. My friend mentioned we should check out the Gelato store on the corner. I had no idea what gelato was. She said it was better than ice cream. How was that possible I thought?! And indeed it was!

Years later another friend mentioned how amazing pistachio gelato was. I was pretty skeptical. I loved traditional gelato flavors: vanilla, chocolate, strawberry, raspberry, but hadn’t ventured into more exotic flavors at the time. So I gave it a go a few years back….and it was aaaammmaaazing!

My kids love pistachios. They truly go nuts for them! And since I wanted to make something green for St. Patty’s Day this weekend, I decided to see if I could recreate¬†my now favorite gelato flavor¬†at home.

As many of you know that follow my blog, I am crazy about homemade dairy-free ice cream. I love all different flavors. But this may be my absolute new favorite. It is insanely good.

Pistachio Gelato (Dairy Free, Cane Sugar Free & Vegan)

Ingredients
  • 2 cups shelled, roasted, salted pistachios
  • 1 can coconut milk
  • ½ cup arrowroot (omit if you want a lighter ice cream texture)
  • ¾ cup coconut sugar
  • 1 tsp. lime juice or 4 drops Lime essential oil
Instructions
  1. Place shelled pistachios into a food processor and pulse for 3 minutes. Pour pistachios, coconut milk, arrowroot and lime into a blender or Vitamix container. Blend on high for 2 minutes, pausing to stir several times.
  2. Put Vitamix container in freezer for 30 minutes. Pour mixture into an ice cream maker and process according to instructions for 30 minutes.

Cinnamon Roll Shake! (Dairy Free, Cane Sugar Free & Vegan)

Earlier this week as my husband and I were getting my daughter ready for school, my daughter asked me if I could make a recipe for homemade Cinnamon Rolls. With twenty minutes until we had to leave for school, I said sorry not right now.

“Pleaaaase!”, Emma begged. So I offered to make her a shake with cinnamon and flavors similar to a cinnamon roll. That did the trick. My kids are crazy for cinnamon. They call it red sugar.

The smoothie came out thick and creamy and filled everyone up until lunch time. I’ve even been asked to make it a few times already again this week. Please note this is one satisfying, nourishing and hearty smoothie filled with healthy fats and protein. If you want a lighter version of this smoothie, omit the canned coconut milk and opt for either 2 cups more almond milk or filtered water. Enjoy!

Cinnamon Roll Shake! (Dairy Free, Cane Sugar Free & Vegan)

Ingredients
  • 2 cups almond milk, unsweetened or homemade
  • ½ can of chilled coconut milk (the cream on top of can)
  • 2 cups crushed ice
  • ⅓ cup pecans
  • ⅓ cup coconut sugar
  • 2 tsp. cinnamon or 4 drops cinnamon or cassia essential oil
  • 1 tsp. pure vanilla extract
Instructions
  1. Add all ingredients to Vitamix or blender. Blend on high for 2 minutes. Pour into glasses. Sprinkle additional cinnamon on top if desired. Serve!

Chocolate Peppermint Candy (Dairy Free, Refined Sugar Free & Vegan)

You gotta love a healthy indulgence that can be ready in a few minutes. My 5 year old knows all too well what candy is as she just participated in her class Valentine’s Day Party last week and received a big bag of sweets.

I love creating recipes with my daughter as she learns that what we make at home can be not only healthier, but better tasting than sweets with ingredients I can’t even pronounce. Today we had a special moment in the kitchen: combining ingredients, listening to music and giggling. Ahh a priceless moment!

I hope these treats will curb any sweet tooth you may have. These candies can be stored in your freezer and pulled out and eaten anytime. I’ll be doing that tomorrow for my 2pm afternoon treat ūüôā

You can get the peppermint essential oil I use in this recipe and many other recipes here. I am never without peppermint essential oil!

  • ⅔ cup melted coconut oil (melt in pan over low heat if oil is hard)
  • ¼ cup raw coconut nectar (raw honey will also work)
  • ½ cup cocoa powder
  • 1 tsp. pure vanilla extract
  • 2-3 drops Peppermint essential oil
Instructions
  1. Combine all ingredients into Vitamix or blender and blend on high for 1 minute. Pour batter into a baking dish and spread evenly with a spatula. Place dish in freezer for 15 minutes. Cut into pieces and enjoy!
