Move over store bought treats, there is a new treat in town! These no-bake chocolate morsels are little pieces of heaven. My daughter said this morning, “Can I eat them for breakfast? These are perfect Mom!” Well, I’m not sure they are exactly breakfast food, but they will hit the spot just about anytime of the day that suits your preference 🙂

No-Bake Chocolate Bliss Balls (Vegan)

Ingredients
  • 1½ cups pecans, soaked in water for 8 hours
  • ⅓ cup cashew butter
  • 6 dates, soaked in water for 10 minutes
  • ¼ cup dairy-free chocolate chips
  • 1½ tsp. pure vanilla extract
  • ¼ cup coconut flakes (optional)
Instructions
  1. Discard the water from the pecans and dates and remove the pits from the dates. In a food processor with an S blade, add in the pecans, cashew butter, chocolate chips and vanilla extract. Process or pulse for 2 minutes. Add in the dates and pulse for another 2 minutes.
  2. Unplug and remove the container from the food processor. Roll the mix into 14 balls. Sprinkle coconut flakes on top of each ball. You can also add in some of the coconut flakes into the balls when you are mixing the other ingredients if you would like.
  3. Refrigerate balls to set. Store in the refrigerator.

Ahh limes…always so refreshing! I love to drink lime water and homemade Limemade. Limes, like lemons are actually quite alkalizing for the body. But limes in desserts are what I really love.

Honestly, I’m crazy for anything lemon or lime related when it comes to desserts. Especially in this intense Summer heat! This ice cream reminds me of the filling of a Key Lime Pie and is perfect in a bowl or on top of a gluten-free ice cream cone.

Key Lime Ice Cream (Dairy Free & Vegan)

Ingredients
  • 2 cans coconut milk
  • ½ cup coconut nectar (or sweetener of choice)
  • 2 tsp. pure vanilla extract
  • ⅓ c. juice from fresh squeezed key limes (or 20 drops Lime essential oil)
  • pinch of sea salt
Instructions
  1. Pour all ingredients into a blender and blend on high for 2 minutes until smooth. Place blender container in the freezer for 30 minutes. Then pour mixture into an ice cream maker and process according to directions for 20 minutes.
  2. Enjoy!

I created this smoothie to please my pear loving daughter and to make sure everyone in the family gets a good dose of protein and fiber in a smoothie. It’s been hot here and that usually means lots of homemade ice cream, salads and smoothies. I try to pack as much of a nutritional punch in all of those categories as possible 🙂 This smoothie is satisfying, fulfilling and darn good for you. Enjoy Friends!

  • 1 cup unsweetened or homemade almond milk
  • 1 cup water
  • 1 pear, washed and cored
  • 1 scoop of vanilla protein powder (of your choice)
  • 2 tsp. white chia seeds
  • ⅛ tsp. pure vanilla extract
Instructions
  1. Place all ingredients into a Vitamix or blender and blend on high for 1 minute. Serve over ice and enjoy!

Alrighty folks, here it is…these chocolate power balls are  one of the best snacks around! They are naturally energizing, taste fabulous and are jam packed with fiber, protein and all the good yumminess your body needs and naturally craves. My daughter just ate 5 of these babies. I had to cut her off from any more until I make a new batch tomorrow. Because I will be…they are just too good not to when I still have the ingredients on hand!

Wild Orange Chocolate Balls (Cane Sugar Free, Dairy Free & Vegan)

Ingredients
  • 5 dates
  • 1 cup cashews
  • ½ cup sunflower kernels
  • ⅓ cup organic maple syrup
  • ½ cup chocolate powder or cacao powder
  • 1 tsp pure vanilla extract
  • 5 drops wild orange oil
Instructions
  1. Soak the dates in a small bowl of water for 10 minutes. Discard the water and remove the pits from the dates. Place all ingredients into a food processor. Process for 3 minutes, stopping to scrape sides of bowl if needed.
  2. Turn off food processor and roll mix into small balls. Eat up friends!
  3. Want to switch it up? Additional ideas: substitute cacao powder for carob powder. Instead of wild orange oil, try cassia, cinnamon or peppermint oils or extracts.

When comes to savory foods, there are not many things I love to eat more than homemade chips, hummus and artichoke hearts. So I was super pumped when my recipe for a new hummus recipe that included artichoke hearts turned out what I had hoped for…addicting 🙂 Truth be told, I am slightly addicted to hummus and am always excited when I can enjoy a new twist on the original version. Ingredients
  • 1 cup cooked garbanzo beans
  • 14 oz. artichoke hearts packed in water
  • 1 large garlic, minced and peeled
  • ½ tsp. Herbs de Provence
  • ½ tsp. sea salt or Herbamare
  • ¼ tsp. red crushed pepper flakes
  • dash of black pepper
  • Optional: Add in 1 tsp nutritional yeast for a protein and B Vitamin boost and/or more garlic if you are a garlic lover like me!
Instructions
  1. Drain the artichoke hearts from the jar or can and add them to a saucepan alongside the garbanzo beans. Cook over medium heat until hot. Let cool for 5 minutes.
  2. Add all ingredients to a food processor and process for 3 minutes. You may need to stop the machine and scrape the sides of the bowl several times. Scoop the dip into a large bowl and enjoy. We like to eat it with sweet potato chips.
